CANON HISTORY: Mitsuhide at the AnS Wiki
It's a little scant, so I'll elaborate as well here. (As a quick note as well, the wiki has romanized his last name as "Rouen", but it has also been seen as Lowen, Luen and Ruen in the manga. I'm going with "Luen", so it's clear.)
The Kingdom of Clarines is a flourishing kingdom. With its two well-loved princes, Prince Izana and the younger Prince Zen, the people of Clarines are taken care of very well. This is why Mitsuhide's dream was always to serve Prince Izana to the very best of his being. He worked very hard, becoming the best of the best of the swordfighting palace guard, at the young age of 17. And it seemed all of his dreams were coming true, as Prince Izana approached him now that he was the best of the best--
And asked Mitsuhide to be the guard of his younger brother, Prince Zen. Of course, Mitsuhide would and could deny his prince nothing, and he agreed to this assignment. Of course, Prince Zen was trouble. Quick on his feet and fond of slipping his guards to go play with his commoner friend, Zen didn't want Mitsuhide around--and particularly because Mitsuhide was ultimately working for his brother, not for him.
That struck a chord in Mitsuhide and starting his thinking that perhaps if he was going to serve Prince Zen as a personal guard, it should be for the purpose of serving Prince Zen.
OF course, he isn't given long to ponder that before Zen gets himself into trouble, in the form of being betrayed by that commoner friend, almost being killed by the gang he was handed over to. It was Mitsuhide and Prince Izana who ended up saving the young prince, with Mitsuhide being the one to strike the final blow against Zen's traitor friend.
It is at this point that Zen begins to accept Mitsuhide into his life, and it is at this point that Mitsuhide begins to devote himself solely to Zen, his prince.
FAST FORWARD SIX YEARS--doubtlessly filled with danger and shenanigans, to the present day.
Mitsuhide serves as Zen's personal guard, now joined by Kiki. She is his partner-in-arms, and they both fight to protect Zen. And Zen's safety and happiness are Mitsuhide's most important concerns, without a doubt. This is the guiding thought process for all of Mitsuhide's actions throughout the series.
And then canon happens...which is admittedly more relevant to Zen and Shirayuki's characters than Mitsuhide and Kiki's; the two of them remain consistent side characters throughout the main storyline, giving support to Zen and those who would serve him, threatening those that would harm him, and being comic relief when the moment serves (or, well, the good-natured Mitsuhide is, anyway).
Most recently, Kiki revealed that she had made a bargain with her father to only stay a particular time in Clarines, learning what she could, before returning to take up leadership of her noble house. She never told Mitsuhide, however, and he felt extremely betrayed to learn at the last moment that this was the case. But in the end, they went together to speak with Kiki's father, buying her more time in Clarines--which means she can remain at Zen's side (and Mitsuhide's).
Otherwise, they are simply very loyal knights and very strong partners, always making sure to do their very best in service to their lord.
CANON PERSONALITY:
The first and most consistent piece of Mitsuhide's characterization is that he is absolutely loyal. After all, that's part of why Izana assigned him to be Zen's retainer. Mitsuhide embodies this trait for the entire series, even soon prioritizing Zen's well-being and health and safety beyond everything, even his loyalty to Izana. He's forever loyal to Clarines and both Prince Izana and Prince Zen, but his loyalty to Zen is especially potent. He frets after Zen's well-being down to the mundane and minute details, making sure he has slept and eaten, worries about each cut and scrape the prince obtains and follows him like a very persistent burr.
This highlights another of his personality traits, which is that of an absolute mother hen. He is this role for most all of the cast (Kiki usually being the exception, as she needs no mother henning). He makes sure that they sleep, and eat, and take care of themselves. He's there to remind them that they have to stay healthy and well and he is quick to take youngsters under his wing (like Shirayuki) to take care of them as well. So long as they pose no threat to Zen, he is happy to take care of youngins who clearly don't know better. This, of course, makes him a very good retainer, as he not only protects Zen, but looks after every single aspect of his life, from his health to his paperwork.
Of course, with all of this, Mitsuhide is a naturally protective person. It isn't that he's suspicious--he'll never be rude or impolite to someone he has just met unless they've done something to call for it. But he is quite proficient in sitting back and watching someone until he is certain they're trustworthy. It's a retainer thing, and most prominent when Zen is around. He's far less concerned for anyone else, after all, including his own self; but that natural wariness is something that he's learned to have as a prince's guard. His own good nature is no reason to let someone untrustworthy get to Zen, after all. He would never be able to forgive himself.
Because Mitsuhide is good-natured. He's cheerful, most usually having a smile on his face, and he's always the one to try to lift people's spirits when the mood is grim. He's not easily brought down from his good mood, and he takes to tough tasks with a grin and an awful lot of perseverance. Because of this, Mitsuhide is usually the butt of the jokes of the group, but even though he acts offended and exclaims his embarrassment and offense to the sky, he's never really upset by these jokes. If they bring smiles to the group's face, he's content with that. And he very rarely holds anything said about him towards anyone. After all, if it was just a joke, it was just a joke. Easy enough to leave it at that. This makes for a good counterpoint to his partner Kiki, who is stoic and almost grim-seeming--but always quick with a quip about Mitsuhide that leaves him squawking. He does usually live a very cavalier and lighthearted lifestyle, though, rarely needing to pull out the serious face so long as the people under his care (especially Prince Zen) are safe and well.
Mitsuhide is a very sincere guy; he doesn't hide the truth, and tends to be rather straightforward and even a little blunt. He has no issues with teasing others who deserve it--good-naturedly, of course. But because of this, he's mother hennish in the way that he has no problems with calling people out on their nonsense, especially if they're being particularly ridiculous. He means it in the best possible way, though.
Generally, though, he speaks his opinions only when it's necessary, and not before then. He's fine with keeping his thoughts to himself, usually (it comes of being a retainer to a prince; being able to stay quiet is important). However, that said, he can be rather sassy when it comes down to it; Izana, the crown prince of Clarines, calls him "cheeky". He just has no issues with saying what needs to be said, when it comes down to it--especially when he bluntly points out the facts of the matter.
Not to say that he doesn't have a serious face, because he absolutely does. When the situation calls for it, he can be as grim and serious as any knight. For the safety of his friends, his country, his princes and his partner, he will easily slip into a very serious mode indeed. Some things will never be a joke, and he will fight with everything he has to protect those things. Along those lines, he really does have a vindictive streak, especially towards those who have hurt Zen; he won't ever forget, and he won't ever forgive, and while he's much too disciplined a knight to ever go after them alone, he will watch them every second they are in his vision.
Mitsuhide is, after all, a knight. He's disciplined, he's determined, and he is good at his job. This means that for all of his good cheer and smiles, he's not afraid to do what needs to be done for the sake of the people he cares about. The biggest example of this is when he performs the finishing blow on the child who betrayed Prince Zen. He couldn't have been more than eleven or twelve--but it was what needed to be done to protect his prince, and so he didn't hesitate to kill him.
Overall, Mitsuhide is simply a very good-natured adult--a knight, with all that that entails, but old enough to be sensible and full of mother-hen-like traits. He is ridiculously hard-headed and determined, unshakeable when he wants to be, but usually he is simply a very pleasant person, happy to help out those who need it...so long as it doesn't interfere with his duty to Prince Zen who is, after all, the person Mitsuhide dedicated his life to.
POINT OF DEPARTURE: --
ABILITIES:
Mitsuhide is a normal human, and as such, doesn't have any ridiculous powers. He is an extremely proficient sword fighter, having become the best of the palace guard at age 17, and undoubtedly keeping up that ability throughout the years. He hasn't been seen being beaten in the manga yet.
He's basically a perfect housemom; he is an excellent cook and very good at basic household tasks like brewing tea and taking care of people and cleaning and everything else a mother hen should be. When it comes to being a retainer, he's completely and totally geared towards it, so Looking After People is something he has perfected so much that it could be considered a skill.
Otherwise, he's good at being the butt of jokes.

The jaunt had passed with its own trials and tribulations, and Mitsuhide was rather exhausted, truth be told. He'd had plenty to do, between looking after the kids who had gotten themselves in over their heads (so many kids in this place, so many youngsters who deserved so much better) and trying to figure out just what was going on. After all, that was their task, and so long as that was what they were meant to do, he would do it.
Because the sooner they finished the jaunts, the sooner he could focus on the important things--like trying to figure out how to get back to his prince.
(He doubted Zen really minded the break from him, honestly; he was probably relaxing right now without Mitsuhide's hovering, but if that was the case, then Mitsuhide had to get back even more quickly, because who else would look after him?)
Mitsuhide sighed quietly, relaxing even as he cupped his hands behind his head, stretching slightly.
Honestly, he knew it was his own anxieties adding to this mess. Zen was undoubtedly fine, and would be when he managed to get back. But it had been his task to look after his prince for so long that every moment he spent away was a little bit...strange.
And then, with a huffed breath, Mitsuhide shook his head, smiling slightly. Well, that was the case and always would be the case--but even as he shook his head, he muttered to himself, "Well, so long as I'm here, I might as well help out how I can. Zen will understand."
So long as he was here, he would do his best; the jaunts did seem important, after all, and sometimes people who shouldn't have been in danger were. If he could help them, that was absolutely worthwhile. And he wouldn't forget Zen, of course; but though his prince would be constantly in the back of his mind, sometimes you had to complete the task before you before you could get back to where you properly belonged.
